This Exqium knife-sliced shoulder comes from a farm in Andalusia where each animal has a hectare to eat, acorns, roots and herbs. Each animal eats between 8 and 10 kgs of acorns a day.
The breed is 100% Iberian, so this shoulder has the appetite of Epaule Pata Negra Bellota.
The 22 to 28 months maturing period is totally natural, and no mechanical means are used to refine the shoulders.
The ingredients of this shoulder are: Shoulder and salt. No nitrite and no preservatives.
So it's a 100% natural ham.
From the rearing to the final curing of the ham, everything is done in harmony with nature.
The breeding region is the province of Huelva, in Andalusia, which produces the best hams in Spain.
This shoulder is cut with a knife by professionals in Spain.
