Cinco Jotas 5J bellota Iberian ham is considered one of the most prestigious Iberian hams. Founded in 1879 in Jabugo, Andalusia, Cinco Jotas is renowned worldwide for the exceptional quality of its pata negra hams and for its traditional expertise, passed down through several generations.
Iberian pigs are free-range in the dehesas of southwestern Spain. During the montanera, an essential period in their rearing, the animals feed mainly on acorns and natural resources found in these wooded pastures. This exceptional diet promotes the infiltration of fat into the meat and contributes to the characteristic aromatic richness of Iberian bellota ham.
Cinco Jotas hams are slowly cured in the natural cellars of Jabugo. The specific climatic conditions of this region allow the hams to mature gradually. This prolonged curing process develops a melt-in-the-mouth texture and great aromatic complexity with delicate notes of dried fruit.
Traditional knife cutting respects the natural structure of the ham and produces thin slices that highlight the fineness of the fibers and the shine of the delicately infiltrated fat. This presentation reveals the full aromatic richness of Iberian bellota ham.
