BIO 100% Iberian Pata Negra shoulder from the Extremadura region in southwest Spain.
This organic shoulder comes from certified organic animals, farms and oak forests. In these productions we obtain Iberian pata negra ham and 100% purebred Iberian shoulders, which will have a black band certifying the quality of the product and a green band guaranteeing that it is ORGANIC.
This shoulder has no additives, no nitrates and no preservatives. The only ingredients are ham and salt.

In addition to perfect breed purity, we also check that the breeding and oak forests are certified for organic breeding.
What's more, Pata Negra Iberian shoulders and hams from these farms contain no nitrites or additives. The only ingredients are ham and salt.
Each animal feeds solely on acorns, herbs and roots in large areas that are certified organic and also certified for the breeding of Iberian bellota pigs. So there's double control over the quality of these products.
The maturing process is also totally natural. Approximately 24 months, or two years of rest in cellars where there is only natural air circulation.
Each Pata Negra Iberian shoulder from this production will have two colored bracelets, one black to certify it as 100% Pata Negra Bellota Iberian and another green to certify it as ORGANIC.
