Jabugo ham is one of the finest Iberian pata negra bellota hams.
It is made from Iberian pigs of the purest breed, offering harmonious organoleptic qualities and a characteristically rich aroma.
This is the result of the breed as well as the acorn-based diet and natural grazing in oak forests, where there is a maximum of one pig per hectare. But above all, it's the result of a very slow, totally artisanal production process based on the micro-climates of the Sierra de Huelva. Maturations of up to 48 months, depending on the evolution of each piece.
Jabugo hams are hand-cured in the upper part of the buildings, where humidity and temperature are regulated by opening and closing the windows. No artificial means are used. This guarantees exceptional hams.
The entire process of rearing, feeding and maturing is supervised by an independent body, the Jabugo PDO Regulatory Council.
