Oak forests have huge expanses with trees that give a lot of acorns. Each pig will eat between 8 and 10 kg of acorns per day. This diet will bring a very good taste to the fat of this shoulder.
The 100% Iberian breed means that we have a shoulder with a good amount of fat infiltrated and covering it. This allows for long curing periods of approximately 24 to 28 months.
