This shoulder comes from pigs raised in the wild in the oak forests of southern Spain. Each animal feeds solely on acorns, herbs and roots in large tracts of land that are certified organic and also certified for breeding Iberian bellota pigs.
Maturation is also totally natural, lasting around 24 months.
This boneless shoulder has a green seal certifying it as organic, and a black seal certifying it as 100% Iberian Pata Negra Bellota.
