This Exqium boneless half shoulder comes from a farm in Andalusia where each pig has a hectare to eat, acorns, roots and grasses. These animals are not all alone, but in herds. This means that 100 pigs will be in 100 hectares of land.
The breed is 100% Iberian, so the shoulder is called Epaule Pata Negra Bellota.
The 22-28 month maturing process is totally natural, with no mechanical means used to refine the shoulders.
