Raw sheep's milk cheese with black truffle.
The production of this cheese is done using the Manchego method. However, the DOP Manchego does not allow truffles to be used in its name because truffles are not found in La Mancha.
The truffle used in this cheese is one of the best because it is the "Tuber Melanosporum" which is that of Périgord and that which is also found in the lands to the north east of Spain.

This cheese made from raw sheep's milk and the best truffle is matured for three months to achieve a perfect balance of flavors.
Too matured we would lose the good taste of the truffle and not matured enough we would not have a cheese with a certain character.
It is a cheese that you can enjoy alone or with a little acacia honey with black truffle that you can find in our grocery section.
